The clay beneath Iga City in Mie Prefecture was once the bed of ancient Lake Biwa, buried for 4 million years before it was quarried for pottery. That origin is functional, not incidental: the organic matter compressed into the clay over millennia burns away during firing, leaving microscopic pores throughout the body. Iga ware breathes. It absorbs heat slowly and releases it gradually, which is why a donabe made from this clay holds its temperature long after it leaves the flame — continuing to cook the contents without a burner beneath it. Sajitouki, established in 1923 in Mie Prefecture, brings the same considered approach to this Iga ware donabe that the studio applies across its range. The tobikanna finish — fine parallel grooves cut with a chattering tool across the lid surface — gives the black glaze a textured quality distinct from a smooth-glazed pot, the lines catching the light differently as the lid is lifted and replaced. The lower body is left unglazed, the pale Iga clay reading against the black above it. Sized for 2 to 3 people.
