Iga Ware Tobikanna Donabe Black (3-4 People)
Iga City sits above what was once the bed of ancient Lake Biwa, a body of water that receded 4 million years ago and left its compressed organic matter in the clay beneath the ground. When that clay is fired at high temperature, the organic material burns away, leaving microscopic pores throughout the body. The result is a pot that absorbs heat gradually and holds it — continuing to cook after the flame is removed, retaining temperature in a way that dense, non-porous clay cannot replicate. Sajitouki, established in 1923 in Mie Prefecture, brings the same considered approach to this Iga ware donabe that the studio applies across its range. The tobikanna finish across the lid — fine parallel grooves cut with a chattering tool — gives the black glaze a textured depth distinct from a smooth-glazed surface, the lines present in the hand as much as the eye. The lower body is left unglazed, the pale Iga clay reading against the black above. Sized for 3 to 4 people.
