"Kurohada" translates to "black skin," referring to the dark, textured appearance of the blade's surface. This distinctive texture is achieved through the Tsuchime technique, where the blade is hammered to create small, irregular dimples on its surface. These dimples enhance the knife's aesthetic appeal and serve a practical purpose by reducing food adhesion to the blade, making slicing and chopping more efficient.

"Santoku" in Japanese means: "can do three things well". Able to easily cut through meat, fish, and vegetables, this Santoku Knife is the quintessential kitchen knife.

The Kurohada Tsuchime Santoku Knife - a true culinary gem, crafted from Aogami Blue Steel and with a stunning Rosewood handle, is renowned for its remarkable durability and sharpness.

Tosa Knives

Tosa Knives, also known as Tosa Hamono, boast a rich history dating back over 400 years. Their origins lie in the Tosa domain (present-day Kochi Prefecture) on the island of Shikoku, where skilled blacksmiths honed their craft to create not just swords, but also tools for everyday life. The traditional forging technique, called Warikomi, involves layering different steels for strength and flexibility.

While still deeply rooted in tradition, modern Tosa knives incorporate additional techniques like Damascus steel forging, creating beautiful layered patterns on the blade. They also utilize textures like Tsuchime (hammered finish) and Nashiji (pear skin finish) to enhance the knife's aesthetic and functionality. Today, Tosa knives remain highly sought after for their exceptional craftsmanship, making them coveted tools for both professional chefs and home cooks alike.
