Note on Kiritsuke knife tip
The Kiritsuke knife features a finely tapered “K-tip,” which is intentionally made extremely thin and delicate compared to multipurpose or Western-style knives. This refined construction allows for precision, but it also requires careful handling. Always use the knife on a proper wooden or soft cutting board and avoid applying excessive pressure or lateral force, as improper use can damage the blade.

In some cases, the tip may appear slightly irregular or finely chipped upon arrival—this is not a defect but a normal result of the traditional sharpening process used to achieve the Kiritsuke’s profile. If a more polished finish is preferred, some users choose to consult a professional sharpener after purchase. Please note that minor irregularities or damage caused by handling outside proper use do not affect performance and are not grounds for return or replacement.

Whetstone

  • Before use, soak the whetstone in water for about 5–10 minutes until air bubbles stop appearing. Avoid prolonged soaking.
  • During sharpening, keep the surface moist and use gentle, even strokes to maintain consistency.
  • After each use, rinse thoroughly to remove residue and allow the stone to dry completely in a shaded, well-ventilated place.
  • Do not store it while damp or expose it to direct sunlight or extreme temperatures. If the surface becomes uneven, flatten it with a lapping stone or diamond plate to restore smoothness.
