The Rich Heritage of Tosa Blade-Making

Tosa, the historical name for present-day Kochi Prefecture on Shikoku Island, boasts a blade-making tradition that spans over 400 years. This region is renowned for its "Tosa Uchi Hamono," a term that refers to the free-forging technique where skilled artisans handcraft blades without the use of molds, allowing for unique and customized designs. This method, deeply rooted in the samurai sword-making practices of the 16th century, has evolved to produce a wide array of tools, including kitchen knives, that are celebrated for their sharpness, durability, and ease of maintenance.

 

Ishizuchi Knives: A Century of Excellence

Established in 1920 by Tomika Kajiura, Ishizuchi Knives began in Ehime Prefecture on Shikoku Island, where the first generation of the Kajiura family focused on the wholesale of steel and metal products. Initially specializing in agricultural tools and equipment, their early products served the communities that depended on these tools for farming, fishing, and forestry, connecting people to nature across mountains, seas, and fields. As the business grew, Ishizuchi expanded into household goods and kitchenware, providing essential items to Japanese homes.

However, it was the discovery of Tosa's master craftsmen—renowned for their skill in producing traditional forged knives—that inspired Ishizuchi to shift focus entirely to knife-making. These artisans preserved techniques derived from Japanese sword-making, passed down over a thousand years. Recognizing the artistry and heritage embodied in these methods, Ishizuchi Knives embraced this legacy, adopting the highest standards of Japanese knife craftsmanship.
